……………..This is a chicken receipt that was given to me by CHANTAL……When she and Angela visited me over the Halloween Holiday, Chantal brought chicken parts, breasts, thighs, legs and wings that she had been marinating for 24 hours . The marinade consisted of…..olive oil, lemon juice, white wine, garlic, shallots, thyme, rosemary, bay leaves, salt and pepper……We baked it in the oven for one hour, and it was DELICIOUS……I was getting bored with chicken!….but made this way was so flavorful, that I started to like chicken once more….We also had root vegetables drizzled with honey, which is how Jac always made it. This was knew to Chantal and she LOVED IT….Angela also make a cauliflower with three cheeses to complete the “Mischief Day” meal….I decided to give it a try on my own, so I bought everything except the breasts. The rosemary, bay leaves, and thyme were fresh, not dried out in a container. I cut up the shallots, and chunks of garlic, and added them into a large bowl with all of the other ingredients. Then I washed and patted dry all of the chicken after cutting away the excess skin from the thighs. It all went into the mixture, and I let it marinate in the refrigerator over night. In the morning I mixed it all up with a large spoon to make sure all of the chicken soaked in the marinade, and back into the refrigerator it went. In the evening when I was ready to cook it I lined the baking pan with parchment paper….I laid the chicken out with the garlic, shallots, some of the rosemary and thyme twigs. I lightly drizzled some of the marinade over each piece [not too much…I didn’t want too much liquid], and put it in the oven at 400 degrees….There was a lot of chicken so I left part of it in the marinade, and back in the refrigerator…..which I cooked the next day……Lots of protein!…….After an hour I took it out and put the chicken on a plate to rest before eating…..It not only looked great, but it taste just like the chicken Chantal had made for us……..DELICIOUS……If your bored with chicken…..give this a try……….I’m sure you will love it!
