……………………..I cooked up a pretty quick dinner tonight. I heated olive oil in a pan with salt and pepper. I cut up the cheese and parsley sausage and browned it while the quartered new potatoes were boiling. When the sausage browned I added minced garlic, thyme, and balsamic vinegar. I added white beans and halved small tomatoes…..then I added the potatoes and mixed it up and let it simmer…………..delicious!

I love anything with balsamic vinegar This would be a nice departure from my usual sausage, peppers, marinara and pasta. I am going to try it.
That’s what Cathy and I thought. I actually made it while talking to Cathy on the phone and she said to add the tomatoes, potatoes and beans and to cook it on the stove top in oil, minced garlic, thyme, salt and pepper and the balsamic. Tonight I had the left overs and added Kalamata olives….yummy!
